Broccoli and Cheddar Soup from Pacific Warf Cafe

Looking for a delicious soup to serve in your Sourdough Bread Bowls? Disney inspired Broccoli and Cheddar soup is perfect for a snowy day, summer day, or craving day. Usually served at Pacific Warf Cafe inside bread bowls baked by the neighboring Boudin Bakery, broccoli and cheddar soup is an ideal balance of savory and seasoned flavors with perfectly cooked vegetables.

It is a huge favorite of my husband's! His first request to fill the sourdough bread bowls I baked on Easter Sunday and he was right on. What is nice about this soup is it isn't too sharp or thick. It also doesn't leak out of the bread bowl or make it soggy. It is loaded with fresh broccoli and a few hidden grated carrots. You can use any combination of cheeses you like, and I took the opportunity to use up some stragglers from other recipes. Cheeses included: 2% sharp cheddar and savory Irish cheddar. I used heavy cream thinned with a little water today due to supplies but you could also use 2 cups of whole milk. Moral of the story is use what ya got! Look out for Loaded Potato Soup next!

Broccoli and Cheddar Soup

Yield 4-6 servings


  • 28-32 oz of chicken broth (or equivalent water and chicken bullion)
  • 2 small broccoli crowns, chopped
  • 1/2 carrot, finely grated
  • 1/4 cup butter
  • 1/3 cup flour
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 1/2 cups heavy cream
  • 1/2 cup water
  • 2 1/2 cups of cheddar cheese, shredded


  1. Heat chicken stock in medium sauce pan. Simmer chopped broccoli in chicken broth for 10-15 minutes until soft when checked with sharp knife but still bright green.
  2. Add heavy cream and water to a microwave safe bowl or large glass measuring cup. Microwave for 1 minute to warm. Set aside.
  3. Meanwhile, melt butter in separate large saucepan. Add flour and cook over medium-low heat, whisking constantly for 2 minutes. Season with salt and pepper. Slowly stream in milk and continue whisking until smooth. Add grated carrots. Cook for a 4-6 minutes until thickened. 
  4. Add cooked broccoli and chicken broth, stir until combined. Continue to cook on medium low until beginning to thicken. 
  5. Remove from heat. Stir in cheese 1/2 cup at a time until smooth. If it is too thick loosen with a bit of extra chicken broth. Enjoy!
